Executive Chef of the Mexicola Group
Steven Skelly, the Executive Chef of the Mexicola Group in Bali, began his culinary career washing dishes in a friend’s dad’s restaurant in England—an experience that sparked his passion for the energy and atmosphere of kitchen life.
While working at Quo Vadis in London’s West End, Steven’s Australian visa was approved. In 2002, he began his Sydney career at the iconic Bondi restaurant Hugo’s, later moving on to the acclaimed fine-dining restaurant Bilson’s. He then took on the role of Executive Chef at Pier Restaurant in Rose Bay, where he gained recognition for crafting exceptional fine-dining dishes.
In 2014, Steven opened Urchin, an Australian-style seafood restaurant that quickly gained popularity thanks to his deep knowledge and love of seafood. Two years later, he joined the Icebergs Group as the Executive Chef of Motel Mexicola, and later opened Da Maria and Luigi’s Hot Pizza.
